Avocado and Egg Muffin

Easy and quick breakfast sandwich.

Ingredients

  • 1 english muffin (may need to cut in half length wise)
  • 1 egg
  • ¼ avocado- sliced
  • 1 slice of cheese (any kind. My favorites are pepper jack and american)(optional)
  • 1 TBSP olive oil
  • mayo (optional)
  • Pinch of EBTB (Everything But The Bagel Seasoning from Trader Joe’s)(optional)
  • salt and pepper (optional)
  • hot sauce (I recommend Trader Joe’s Jalapeno Pepper Hot Sauce or Tabasco, but any will work) (optional)

Directions

  1. Prepare and measure out all ingredients before you begin. (Trust me, you’ll want to work fast, so you can get your egg and english muffin finished around the same time, so you can enjoy your meal!)
  2. Heat 1 TBSP of olive oil in a frying pan on med heat. Once oil is hot, carefully place the egg (with or without yolk) into pan. Fry egg on both sides.
  3. When the egg is about half done, toast your english muffin to your liking.
  4. Once toasted, layer on the egg and avocado. Also, at this time, if desired,  add mayo, cheese, hot sauce and EBTB and salt and pepper.
  5. Enjoy!
